Sweet Potato Pie




You will need:
1 Un-baked pastry lined pie shell.
You can find 2 great Single Pastry Pie Crust Recipes HERE [do not pre-bake]


2 Cups cooked Yams or Sweet Potatoes

1/2 Cup Unsalted Butter

1/2 Cup Heavy Cream

1/2 Cup Brown Sugar packed

2 Large Eggs
1 tsp. Vanilla

1/2 tsp. Cinnamon

1 tsp. Ground Ginger

1/2 tsp. Ground Nutmeg

2 Tablespoons Orange Juice
Dash Salt


Mash Sweet Potatoes with half of the butter. (1/4 cup) let cool. Add heavy cream, brown sugar, eggs, vanilla, spices and orange juice. Beat. Turn into Pie Crust. Bake at 375 for 20 minutes.


Carefully pull pie out of oven and top with the following:

1/4 Cup Brown Sugar

1/4 Cup Butter

1/2 Cup Chopped Pecans
{ahead of time, use fork or pastry blender to cut cold butter into the brown sugar and pecans}

Put pie back in oven and bake another 25 minutes, or until knife inserted into pie, comes out clean. Serve with Ice Cream or Whipping Cream. {I used sweet potatoes but I think Yams would be even yummier! It is scrumptious!}

This resembles a sweet potato souffle type recipe my SIL loves for Thanksgiving as a side dish. It always tasted like dessert to me. I think we should try this! Thanks for sharing :)
