Strawberry Pie Cookies

If you love Fresh Strawberry Pie,
Strawberry Shortcake,
Cream Cheese, Real Whipping Cream,
Fresh Strawberries, and those yummy cookies everyone has a different name for;
{Russian Tea Cakes or Mexican Wedding Cakes...}

You'll LoVe these.

Strawberry Pie Cookie

Strawberry Pie Cookies

Beat 2 sticks butter that are at room temperature
Add 1/3 cup powdered sugar and 1 Tblsp. of vanilla
Blend in 1 heaping cup finely ground toasted pecans
Add 2 Cups Flour
Mix well, dough will be stiff.

Divide dough into thirds, onto 3 pieces of plastic wrap or wax paper.
Roll into logs about 1 1/2" diameter.
Wrap and Chill.

Slice logs bout 1/4" thick
Bake 10-12 minutes

Sift 1 cup powdered sugar onto jellyroll pan or flat plate or platter
Place warm cookies on bed of sugar
Now sift powdered sugar lightly over tops

Whip 8 oz. Cream Cheese softened and 3/4 Cup Powdered Sugar
In another Med. Bowl, whip 1 pint of real whipping cream with 1/4 cup powdered sugar
Fold cream cheese into whipped cream
Stir in 1/4 tsp. vanilla

When cookies have cooled,
Pipe cream cheese mixture on top of each cookie
Top each cookie with a slice or two of a strawberry.
Melt in your mouth goodness...

My recipe doesn't have a temperature?
I'd say probably 375 - 425.
(sorry about that).

I am fortunate enough to live somewhere that for about a month in the summer you can buy gallons of picked that morning goodness on the side of the road. I always by so many strawberries that by the end of the season my kids don't even want to look at them. lol I will be saving this recipie for June! ;)

The strawberry treats look soo good. I went back a bit on you blog & found the tutorial for the sweetest christmas tree wall hanging. I think it would make a sweet gift for someone in a nursing home that doesen't have much space. Hnaging on the wall they can see it from their beds lying down. Thanks for sharing. Mmmmmm, these look good! My daughter would hate them because of the cream cheese but I'd love to make them for a church function.

These are perfect to make especially since Strawberries are everywhere for V-day. I have never tried cream and cream cheese! I am intrigued...better get cooking.

Aha!! When I made these cookies the first time I thought it was strange that there wasn't any flour listed. I didn't want to chance it so I made a regular Russian Teacake cookie.
Now I see you have added the flour Thanks so much. I was just coming here to make these again and I needed the icing recipe.
