WATERMELON SALSA

3 cups watermelon (seeded and chopped)
1/2 cup chopped green peppers
2 tblsp. lime juice
1 tblsp. chopped cilantro
1 tblsp. chopped green onion
2 tblsp. chopped jalapeno peppers
Combine well. Cover. Chill at least an hour. Serve.
*note* I'm kinda a light weight when it comes to spicy/hot. So I probably won't put the jalapeno's in when I make it. But if you like a little bite, leave em in.

This salsa looks so fresh and luscious! I can just imagine how juicy the watermelon makes it! ANd the colors are great. I have a half watermelon in my frig, so I will make this for lunch tomorrow with baked tortilla chips!This is a meal in itself. Yummy!

This is also great with chunks of feta cheese. Kinda sweet/savory taste.
