A Blueberry "Coffee" Cake Recipe

Have I told you lately how much I still love my friend in the kitchen; Ms. Kitchen Aid?

She was free, remember? Swag Bucks and a little patience landed this pretty red thing on my doorstep last year.

Fresh Blueberries are everywhere right now. They are so yummy. I had a craving for some Coffee Cake yesterday and decided I'd make a Blueberry "Coffee" Cake for my morning breakfast today.

So Ms. Kitchen Aid some fresh blueberries and I, got to baking...

And can I just say that it turned out heavenly!

Like it was really hard not to eat the whole thing!

Blueberry Breakfast Cake

Here's my Recipe...

Blueberry "Coffee" Cake


Blueberry Breakfast Cake
1/2 Cup Butter Softened
1 Cup Sugar
1 Egg
3 tsp. Lemon Zest
1 tsp. Vanilla
1/2 Cup Buttermilk
2 Cups Flour
2 tsp. Baking Powder
1 tsp. Salt
2 Cups Blueberries tossed in 3 Tablespoons of Flour

Preheat oven to 350 degrees
Cream together: Butter, Sugar, Egg, Lemon Zest and Vanilla
Mix in separate bowl: Flour, Baking Powder, Salt
Add Flour mixture alternately with Buttermilk to Butter/Sugar mixture

Once it's all mixed, gently fold in Blueberries

Spread in a small square greased (I use PAM) pan
Bake for 40 minutes. Test with a toothpick. Bake until toothpick comes out mostly clean. Remove from oven and drizzle with icing. Serve Warm

Icing with a hint of Lemon:
1/2 Cup Powdered Sugar
1 teaspoon Lemon Juice
1 Tablespoon Milk

Wisk together and drizzle over warm Blueberry Cake.
Serves 6 (or more if they're smaller portions)

I have a craem Kitchen Aid, have had it a few years now and I love it too...my daughters also have them. We all have different colours. I love the glass bowl on yours. I also love blueberries so will definitely be trying that recipe!

Ooh it looks so good and that picture of the blueberries in the polka dot bowl is so cute! I remember last time I was in the NW we went blueberry picking and it was so fun (and yummy!)
