Sour Cream Pumpkin Cookies

Lately I've seen a LOT of yummy pumpkin recipes popping up all over Pinterest.

I was especially drawn to the Pumpkin Snickerdoodle cookie recipes.  My go to "sweet" would be a cookie. I love cakes, cookies, pies, and pastry... But cookies... they're my all time favorite. 

But... I was hearing that these Pumpkin Snickerdoodle's didn't offer a lot of pumpkin flavor..

So I decided to experiment a little.... 

Sour Cream Pumpkin Cookies

Now I haven't made any Pumpkin Snickerdoodle's... so I don't have anything to compare my recipe to.... 

But... These are so GOOD! 

They are very similar to a family favorite soft sugar cookie recipe... they practically melt in your mouth, and they have kind of a cakey/muffin like texture... Soft and so yummy!

Sour Cream Pumpkin Cookies

The spices and the pumpkin flavor.... put these cookies on my new fall fave baking list! 
So of course I had to share!  

Sour Cream Pumpkin Cookies

Cream together: 
1/2 cup Soft Butter
2 Eggs
1 1/2 cups Sugar
1 tsp. Vanilla

Mix together in a separate bowl: 
3 cups Flour
1/2 tsp. Baking Powder
1/2 tsp. Baking Soda
1 tsp. Salt
1/2 tsp. Cinnamon

Mix the dry ingredients with the wet ingredients adding the sour cream and pumpkin as you go....
1/4 cup Sour Cream
3/4 cup Pumpkin 

It will be a very soft batter.  Thicker than cake batter, but not the "normal" cookie dough. 

Drop by tablespoonfuls or a regular size cookie scoop on a well greased or parchment paper lined cookie sheet. 

Sprinkle generously with the following mixture: 
1/2 cup Sugar
1 tsp. Cinnamon
1/4 tsp. Nutmeg
1/4 tsp. Ginger
1/8 tsp. Cloves
{a pumpkin pie spice would probably work for the nutmeg, ginger and cloves}

Bake in a 400 degree oven for 10 minutes or until very light brown.  [definitely don't want to over bake these]

Enjoy these soft, melt in your mouth, fall'ish cookies! 

Note:  When I first posted this recipe... I left out the sour cream and pumpkin measurements! Dah... The recipe has now been fixed... :)

Pumpkin is our family's very favorite fall treat. I'll be trying these for sure, and most probably using them to justify a Starbucks run for a pumpkin spice latte. Doesnt that sound like a divine combo? Yum!!!
