I've been doing some Fall Cleaning....
I've also been surfing Pinterest and making some new dinner menu's and stocking the pantry... The husband had a request for some homemade Granola...
A friend of ours shared her recipe with me several years ago... It's the only one I've ever made, but we really like it, so I just keep makin it.
I posted a pic of some on my Instagram feed the other day and was asked for the recipe...
So here ya are...
5 - 6 Cups of Oats ( I use 3 cups of Old Fashioned and 3 cups of Quick)
1 1/2 Cups Coconut
1 Cup Chopped Nuts ( I like to buy the slivered Almonds)
1 Cup Wheat Germ
Mix the above ingredients together and spread into 2 large baking sheets (the big cookies sheets with a lip. Or broiler pans would work too)
In a small sauce pan, mix the following and warm up on low to medium heat.
1/2 Cup Honey
1/2 Cup Packed Brown Sugar
1/2 Cup Vegetable Oil
1 teaspoon Vanilla
1/2 teaspoon of Cinnamon
Drizzle heated ingredients evenly over the granola mixture in the pans. Bake at 325 degrees for about 15 minutes. Watching closely and stir every 5 minutes with a fork.
You can add raisins, craisins, dates, etc.
*** The notes in the recipe said don't bake the full 15 minutes if you add fruit because the fruit will harden. I bake the granola a full 15 minutes and then add the fruit when it comes out of the oven.
You can also substitute ingredients... If you don't like Coconut, add more nuts. I was thinking those All Bran Buds in the cereal isle would be good in the granola too.
Let the granola Cool. Place in Airtight Containers, Bags, or Jars....
I made three batches this weekend and put them in Food Saver bags and put them in the Freezer. I've never frozen the granola before, but it was recommended several places on the world wide web.
